Makes 14-16 cookies
INGREDIENTS:
½ cup cocoa powder
¾ cup + 2 tbsp all purpose flour
½ tsp baking powder
¼ tsp salt
3 tsp ground espresso
½ cup unsalted butter, melted
¼ cup brown sugar
¾ cup white granulated sugar
1 egg
2 tbsp vegetable or avocado oil
1 tsp vanilla extract
½ cup semi sweet chocolate chips

INSTRUCTIONS:
1.Preheat the oven to 350F and line a baking sheet with parchment paper.
2.In a small bowl stir together cocoa powder, all purpose flour, baking powder, salt and espresso powder. Set aside.
3.In a large bowl whisk together melted butter, brown sugar & white sugar until combined. Then whisk in egg, oil and vanilla extract until fully incorporated.
4.To the wet ingredients add the dry ingredients, stirring until combined & a cookie dough forms. Lastly, fold in the chocolate chips.
5.Scoop out about 2 tablespoonfuls of cookie dough per cookie & drop on the prepared baking sheet, spacing the dough about 2 inches apart.
6.Bake for 10-12 minutes until edges are set & the middle is still a bit gooey. Cool the cookies for 5 minutes on the baking sheet before moving to a cooling rack.

This festive cocktail combines citrus juice with the spicy & citrus notes of Northern Keep Vodka and fizzy ginger soda. It's a sip your friends and family will love!⁠

Recipe:⁠
⁠
INGREDIENTS⁠
1.5 oz Northern Keep Vodka⁠
4 oz citrus juice⁠
2 oz ginger soda or ginger beer⁠
ice⁠
garnish with extra citrus slices & mint⁠
⁠
CITRUS JUICE⁠
2 blood oranges⁠
2 cara cara or navel oranges⁠
2 tangerines or 1 large grapefruit⁠
1/2 cup water⁠
1/2-1 tbsp honey⁠
⁠
INSTRUCTIONS⁠
To make the citrus juice: Add peeled pieces of fruit and water to a blender and blend on high for 1 minute. Taste and add ½-1tbsp honey if too tart, blend again and then strain into a container for use in cocktails.⁠
⁠
To make one cocktail: In a glass stir together vodka and citrus juice. Then, add crushed ice or ice cubes followed by a top up with the ginger soda or ginger beer. Garnish with citrus and mint.⁠
