I’m not sure when my obsession with soup started but I do recall having the most delicious pea soup many, many years ago and loved it so much I made my own version – Easy Pea Soup.

To me soup screams comfort. It’s warm, full of flavour and perfect for dipping fresh bread into.  It’s also the perfect accompaniment to grilled cheese.

And that is where this Easy Pea Soup recipe comes from – created with comfort in mind, to keep you warm on cold days or to brighten up the Spring season!

The key to this soup is using frozen ‘sweetlet’ peas; these peas have just a touch more sweetness than regular frozen peas which gives the soup a beautiful flavour.

A delicious and comforting Pea Soup, easy to make and satisfying to eat!

Ingredients

  • 3 tbsp olive oil
  • 8 cups frozen peas I like to use the frozen ‘sweetlets’ peas
  • 3 cloves garlic minced
  • 1/2 large yellow onion chopped
  • 5 cups of vegetable broth
  • 1/2 tsp salt + more for seasoning at the end
  • 1/4 tsp pepper + more for seasoning at the end
  • Optional: Drizzle of greek yogurt

Instructions

  • Heat the olive oil over medium heat in a large pot.
  • Add in the garlic and onion and sauté for 5-7 minutes until they start to brown.
  • Add in your frozen peas, salt and pepper and stir occasionally, for about 1 minute.
  • Next, pour in the vegetable broth and turn the heat up to high for about 5 minutes until it comes to a boil.
  • Remove the pot from the oven and let sit 5-10 minutes to cool slightly.
  • Then, blend the soup in the pot using an immersion blender or in batches using a stand blender.
  • Once the soup is blended, heat on medium-low in the pot for about 5 minutes, taste and add additional salt and pepper to your liking.
  • Serve with a drizzle of greek yogurt, your favourite crackers or grilled cheese!

Notes

  • Watch the colour of the peas; you want them to stay their vibrant green colour so even it if hasn’t come to a boil yet but your peas start to turn a different colour of green thats the time to take the pot off the heat.
  • Important note about pureeing hot soup: When pureeing soup that is still hot, there are a couple of tips to remember – Fill your blender only half-way. Hold the lid tight, covering with a towel when blending. Start blending on low and then increase the speed. This should keep things tidier in the kitchen** Why is this important? The heat from the soup can potentially cause the lid to pop and spray hot soup, so use the tips for soup success! Your other option is to puree the soup in the soup pot with an immersion blender.

    I love green pea soup and make it all the time! Your version has such a vibrant green colour, and I totally appreciate that you kept the ingredients simple! Nothing beats a creamy bowl of soup with a grilled cheese sandwich!
