<p class="wp-block-paragraph">This time of year I like to make more simple recipes, especially after the more-involved meals of the holidays.</p>



<p class="wp-block-paragraph">For weeknight meals, I like to focus on <a href="https://www.cookinginmygenes.com/20-easy-one-pan-dinner-recipes-your-family-will-love/">one-pan or one-pot recipes</a> where the whole dish comes together easily and deliciously of course!</p>

<p class="wp-block-paragraph">I love the produce in January, especially all of the citrus! It&rsquo;s so vibrant and fresh, a nice contrast to the cozy ingredients like potatoes and Winter squash.</p>

<li>Citrus fruits (think limes, oranges, grapefruits etc)</li>

<p>My personal favourite is the blood orange which has a red colour to it and is subtly sweet with hints of pink grapefruit and raspberries.&nbsp; You can find blood oranges in most grocery stores this month.</p>
<p>A couple of delicious ways to enjoy oranges this month that you may not have thought of include:</p>
<ul>
<li>Use orange segments to top yogurt and granola bowls or your favourite oatmeal</li>
<li>Enjoy as a topping to pancakes and waffles with a dollop of almond butter</li>
<li>Blend a few different types of oranges to make a bright juice</li>
</ul>

<p>And, I&rsquo;d be remiss if I didn&rsquo;t share my favourite cake for this time of year; this <a href="https://food52.com/recipes/61547-parsnip-cake-with-blood-orange-buttercream" target="_blank" rel="noopener noreferrer">Parsnip Cake with Blood Orange Buttercream</a> is DIVINE! We make it every year in January because it&rsquo;s not to sweet and celebrates citrus with a beautiful buttercream icing.</p>

<p>It was definitely a quiet holiday season here at our house so we took the opportunity to hunker down, enjoy a ton of movies and read ALOT of books. I took some time to scour my large collection of cookbooks too for new recipes we have not tried yet. There are so many recipes that I continue to go back to!</p>

After a very relaxing holiday season I jumped right back into the swing of things to start the New Year including trying out a ton of new recipes from my fellow blogger friends from my <a href="https://www.cookinginmygenes.com/nourishing-recipes-for-the-new-year/" target="_blank" rel="noopener">Nourishing Recipes for the New Year</a> round-up.</p>
<p>BUT, before I get to 2018, let&rsquo;s swing back to the end of 2017 just for a minute because we took one unbelievable trip to Sweden!<span id="more-1938"></span></p>

We spent a few days in Stockholm which was fully decked out for the holidays and as someone who LOVES the holiday season, I was in heaven!</p>

Everywhere was lit beautifully with lights and one of my favourite parts was going to the Christmas market in Gamla Stan where we drank traditional <a href="https://allrecipes.com/recipe/180453/old-fashioned-swedish-glogg/" target="_blank" rel="noopener">Swedish glogg</a> which is their version of a mulled wine.</p>

After many wonderful dinners in Stockholm we headed north to Skelleftea where we visited my brother; enjoyed many more delicious meals with my brother and his girlfriend; went on a winter hike; watched a hockey game; and, fully enjoyed the swedish tradition of fika,&nbsp;a break with a coffee and a little treat.</p>

I am now obsessed with the swedish lifestyle of &lsquo;<a href="https://www.travelandleisure.com/trip-ideas/yoga-wellness/lagom-swedish-lifestyle" target="_blank" rel="noopener">lagom</a>,&rsquo; which loosely translates to &lsquo;finding spaces, moments, and ways of living that are not too much or not too little.&rsquo; And it just so happens a very good friend of mine gifted me this <a href="https://www.chapters.indigo.ca/en-ca/books/lagom-the-swedish-art-of/9780762463756-item.html" target="_blank" rel="noopener">lovely book</a> over the holidays all about this way of living.</p>
<p>I decided to bring this Swedish idea of a balanced way of living into 2018, always remembering &lsquo;not too little, not too much, just the right amount&rsquo; in everything that I do.</p>
<p>I recently wrote an article and recipe for an upcoming issue of The Supper Club magazine entitled &lsquo;Thoughtful Cooking for the New Year,&rsquo; where I reflect on these exact themes. I look forward to sharing the recipe with you later this year!</p>

<p>And, since we did not get out to the cabin during the holidays we took a quick little trip out for a weekend and enjoyed reading by the fire and cooking a couple of delicious dinners.</p>

We tried a new pizza flavour combination, <a href="https://www.bonappetit.com/recipe/spicy-tuscan-kale-and-ricotta-grandma-pie" target="_blank" rel="noopener">Spicy Kale &amp; Ricotta</a>, that is now one of my go-to pizzas!</p>
<p>Last but not least, I am VERY excited because my team (New England Patriots) is in the Super Bowl again! While I love watching the game I also thoroughly enjoy all of the snacks and you can check out a wicked round-up of <a href="https://www.foodbloggersofcanada.com/45-super-bowl-snacks/" target="_blank" rel="noopener">45 Super Bowl Snacks</a> from fellow Canadian food bloggers (which also includes my <a href="https://www.cookinginmygenes.com/kettle-chip-bbq-chicken-nachos/" target="_blank" rel="noopener">Kettle Chip BBQ Chicken Nachos</a>).</p>

I&rsquo;m so fortunate to live only a short drive from the gorgeous Rocky Mountains. &nbsp;While January has brought us here in Calgary a ton of very cold days, I have been able to take advantage of some of the warmer Winter days to get outside.</p>
<p>I went with a friend on a cross-country skiing adventure one day&nbsp;which included copious amounts of hot chocolate before and after our our outing.</p>
<p>I also enjoyed hunkering down inside on super cold days (I&rsquo;m talking -30C with the wind-chill) and cooking tons of seasonal and comfort food.</p>
<p>This month I&rsquo;m sharing with you some of the&nbsp;recipes I&rsquo;ve been cooking, books I&rsquo;ve been reading and other favourites from January.<span id="more-780"></span></p>
<p>We participate in a farmer&rsquo;s share where we get local produce every other week and currently I&rsquo;m obsessed with parsnips! <a href="https://www.marthastewart.com/933508/roasted-parsnips-rosemary?socsrc=soc_pin_2015_11_30_Food_Scale_CustomImage_l_Recipes&amp;crlt.pid=camp.QgZPPPvDGVH3" target="_blank" rel="noopener noreferrer">Martha Stewart&rsquo;s recipe for Roasted Parsnips</a> is pretty much how we prepare them at home &ndash; I cannot stop eating them!</p>
<p>And along with roasting a ton of parsnips, we&rsquo;ve also been into roasted broccoli. One of my fav recipes for this is from <a href="https://frame.bloglovin.com/?post=5380902753&amp;blog=12243993&amp;frame_type=none" target="_blank" rel="noopener noreferrer">Killing Thyme where she roasts broccoli with garlic &amp; parmesan</a>.</p>
<p>I&rsquo;ve been cooking a lot of recipes from <a href="https://www.tkqlhce.com/click-8182508-11736488-1404948852000?url=http%3A%2F%2Fwww.chapters.indigo.ca%2Fen-ca%2Fbooks%2Fproduct%2F9781443452205-item.html&amp;cjsku=978144345220" target="_blank" rel="noopener noreferrer">Donna Hay&rsquo;s cookbook, &lsquo;Life in Balance,&rsquo;</a> which I received for Christmas. Two of my fav recipes so far are the Tomato &amp; Roasted Quinoa Soup and Chicken, Zucchini &amp; Feta Meatballs. Both recipes include simple ingredients but also have massive amounts of flavour!</p>
<p>My curiosity gave in to find out more about a Danish lifestyle trend&nbsp;&lsquo;hygge&rsquo; which translates roughly to mean &lsquo;coziness.&rsquo; <a href="https://www.dpbolvw.net/click-8182508-10281551-1438649470000?url=http%3A%2F%2Fwww.ebooks.com%2Fcj.asp%3FIID%3D2648069&amp;cjsku=2648069" target="_blank" rel="noopener noreferrer">This book</a> was just too beautiful not to read so I downloaded it&nbsp;to find out more about how to incorporate this into my own life &ndash; I will report back!</p>
<p>I also got a library card so I&rsquo;ve been borrowing books like crazy, making my way through a massive booklist I have on my phone including <a href="https://www.anrdoezrs.net/click-8182508-11736490-1404948852000?url=http%3A%2F%2Fwww.chapters.indigo.ca%2Fen-ca%2Fbooks%2Fproduct%2F9780008124496-item.html&amp;cjsku=978000812449" target="_blank" rel="noopener noreferrer">&lsquo;A Modern Way to Cook,&rsquo;&nbsp;by Anna Jones</a>. She divides the book into 20 minute, 30 minute etc meals which is wonderful for weeknight dinners. Last week we made the Smoky Pepper &amp; White Bean Quesadillas which were absolutely delicious.</p>
<p>And, not to be forgotten my husband&rsquo;s and my birthdays are coming up! &nbsp;We started a tradition a couple of years ago where we pick a cake recipe that we make for ourselves. &nbsp;A couple of years ago we almost took it a bit far when we made this insane <a href="https://www.foodnetwork.com/recipes/bobby-flay/throwdowns-toasted-coconut-cake-with-coconut-filling-and-coconut-buttercream-recipe.html" target="_blank" rel="noopener noreferrer">Bobby Flay Toasted Coconut Cake</a> that legitimately took almost 3 DAYS to make! However, it was SO worth it. &nbsp;This year we&rsquo;re keeping things a little more simple. We&rsquo;re going to make this classic <a href="https://www.foodnetwork.ca/recipe/classic-vanilla-birthday-cake-with-caramel-pastry-cream/12496/" target="_blank" rel="noopener noreferrer">Vanilla Cake with Caramel Pastry Cream</a> from Anna Olson so stay tuned to my <a href="https://www.instagram.com/cookinginmygenes/" target="_blank" rel="noopener noreferrer">Instagram feed</a> &amp; <a href="https://www.facebook.com/cookinginmygenes/" target="_blank" rel="noopener noreferrer">Facebook&nbsp;page</a>&nbsp;for updates on our birthday cake!</p>
