This divine Blueberry Goat Cheese Crostini is the easiest summer appetizer to make! Softened goat cheese is topped with a homemade blueberry mixture and fresh thyme for the perfect savory bite.

Ingredients

  • 1 baguette or crackers
  • olive oil
  • 1 cup fresh blueberries plus extra for garnish
  • 2 tbsp honey
  • 1/2 tbsp balsamic vinegar
  • 200-225g softened goat cheese about 8 oz goat cheese
  • 1 tbsp honey
  • fresh thyme for garnish

Instructions

  • Add blueberries, 2 tbsp honey and balsamic vinegar to a small pot. Bring to a simmer over medium heat and cook, stirring often, about 5-7 minutes until blueberries start to burst. Remove from the heat and let cool completely. If you want the blueberries to cool faster, put the mixture in the fridge.
  • Pre-heat the oven to a low broil. Slice half the baguette into about 1/2 inch slices and place on a baking sheet. Drizzle with olive oil and broil on low for 2-4 minutes until just crisp. Set aside.
  • Stir the softened goat cheese and 1 tbsp honey together. Then spread the goat cheese mixture on a plate or in a shallow bowl.
  • Finish the plate by spooning the cooled blueberry mixture on top of the goat cheese. Top with a few extra blueberries and fresh thyme sprigs. Place in the fridge until ready to serve.
  • Serve with crostini or crackers.
