I made this One Pot Sausage Linguine in collaboration with @lecreusetcanada last year and I'm excited to be making it again! It's perfect to make for the week ahead or for small gatherings.⁠⠀
⁠⠀
Here's the recipe:⁠⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠⠀
INGREDIENTS:⁠⠀
3x spicy italian sausage, removed from casing⁠⠀
2 garlic cloves, minced⁠⠀
1/4 cup red wine⁠⠀
28oz can whole tomatoes⁠⠀
1/3 cup fresh chopped parsley⁠⠀
1/2 cup fresh chopped basil⁠⠀
2 tsp kosher salt + pepper⁠⠀
4 cups water⁠⠀
12oz linguine (~350g)⁠⠀
1/4 cup grated parmesan cheese⁠⠀
Parsley & basil to garnish⁠⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠⠀
INSTRUCTIONS:⁠⠀
1. In a 3.5 quart (or larger) braiser or high-sided pan, add a drizzle of olive oil & turn to med-high heat. Add sausage meat & cook until golden & cooked through about 10-12 minutes, using a spoon to break into smaller pieces.⁠⠀
2. Add minced garlic; cook 2 minutes.⁠⠀
3. Stir in red wine, cook until mostly evaporated.⁠⠀
4. Add in tomatoes, parsley, basil, salt, pepper, stir together & use a spoon to break the tomatoes into smaller pieces.⁠⠀
5. Add water & stir to combine. Bring to a boil over high heat, turn to med-high to keep at a strong simmer.⁠⠀
6. Add in pasta & fold gently into the sauce. The pot will be quite full; that’s ok.⁠⠀
7. Cover & cook for 5 minutes, then remove the lid & cook for 10-15 more minutes. Stir & turn the noodles so they don’t stick to the bottom of the pan, cooking until most of the liquid is absorbed with a bit of sauce left.⁠⠀
8. Stir in parm & let sit for a few minutes. Garnish with parsley & basil.⁠⠀

The chicken is nestled amongst juicy roasted tomatoes and a divine olive oil-lemon pan sauce that I cannnnot get enough of. Topped with Parmesan cheese and broiled at the end for a cheesy finish.

Roasted tomatoes are one of my fav toppings for salads, meats, toasts, and just about anything I can add them to.⁠⠀

Roasting them brings out all the flavour and makes them so juicy.⁠⠀
⁠⠀
Here's how to make them:⁠⠀
⁠⠀
INGREDIENTS⁠⠀
2 cups baby tomatoes, halved⁠⠀
1 tbsp extra virgin olive oil⁠⠀
1/4 tsp garlic powder⁠⠀
1/4 tsp dried thyme⁠⠀
1/4 tsp coarse salt⁠⠀
ground pepper⁠⠀
⁠⠀
INSTRUCTIONS⁠⠀
Pre-heat oven to 350F. Line a baking sheet with parchment paper.⁠⠀
⁠⠀
Mix together tomatoes, olive oil, thyme, garlic powder, coarse salt and a pinch of pepper.⁠⠀
⁠⠀
Spread tomatoes in an even layer on the baking sheet and roast for 30-35 minutes until tomatoes are soft and fragrant.⁠⠀
⁠⠀

Happy first day of Fall! I'm welcoming the new season with this Mulled Apple Cider.⁠⠀

It's warming and cozy and full of Fall flavours, here's the recipe:⁠⠀
⁠⠀
INGREDIENTS⁠⠀
6 cups apple cider or pure pressed apple juice⁠⠀
2 cinnamon sticks⁠⠀
2 star anise⁠⠀
1/4 tsp ground all-spice⁠⠀
1 inch piece of ginger, sliced⁠⠀
1 orange sliced⁠⠀
optional: 1/2 - 1 cup bourbon⁠⠀
Garnish: rosemary and cinnamon sticks⁠⠀
⁠⠀
DIRECTIONS⁠⠀
1. To a large pot add apple cider, cinnamon sticks, star anise, ground all-spice, sliced ginger and orange slices.⁠⠀
2. Bring to a boil over medium-high heat and then turn low to simmer for 15 minutes.⁠⠀
3. Add in bourbon (1/2 - 1 cup depending on how much of a bourbon taste you'd like) and simmer for 10 more minutes.⁠⠀
If you're not using bourbon, just simmer for 5 more minutes.⁠⠀
4. Serve garnished with rosemary sprigs and cinnamon sticks.⁠⠀
