Ingredients

  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 2 cups fresh strawberries, quartered
  • 1 150g Boursin Cracked Black Pepper Cheese (remove from fridge 10 minutes before making the dip)
  • Fresh basil for garnish
  • Crostini or crackers for serving

Instructions

  • Preheat the oven to 350F.
  • Add quartered strawberries to a parchment lined baking sheet along with balsamic vinegar and maple syrup. Stir together and then roast for 20-25 minutes until just softened and the strawberry juices start to release. Set aside to cool.
  • When you're ready to serve the appetizer, spread the Boursin cheese on a low plate or bowl and then top with roasted strawberries and fresh basil.
  • Serve with crackers or crostini. Enjoy!

Notes

  • Want to make crostini to go with this dip? Slice a baguette into 1-inch thick slices and preheat your oven to 400°Fahrenheit. Brush one side of each slice of baguette with olive oil and place on a baking sheet in a single layer. Toast for 10 minutes, flipping after 5 minutes.
  • While the strawberries are roasting you can take the Boursin cheese out. This will give it time to soften slightly into a more creamy cheese, making it easier to spread on the plate.
  • If you don't have a baking sheet, you can use a baking dish instead to roast the strawberries.
  • Don't want to serve this as an appetizer?!  Roast the fresh berries and let them cool, then serve over greek yogurt or ice cream for a lovely dessert
