These pomegranate vodka cocktails are a herbaceous, tart & sparkling sip! Lovely to sip before dinner or with appetizers during the holidays.

Ingredients

For the rosemary simple syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 sprigs fresh rosemary

For one pomegranate vodka cocktail

  • 1/2 oz rosemary simple syrup
  • 4 oz pomegranate juice
  • 1 1/2 oz vodka
  • 1-2 oz prosecco
  • ice

Optional: sparkly rosemary garnish

  • sugar
  • water
  • rosemary sprigs

Instructions

To make the sparkly rosemary garnish

  • To make a sparkly rosemary garnish simply run a rosemary sprig under a bit of water. Then, roll in sugar and set aside to dry.

To make the rosemary simple syrup

  • In a small saucepan over medium-high heat, combine sugar and water. Bring to a boil, stirring until sugar is dissolved. Add in the rosemary sprigs, stir and remove from heat. Let infuse for 5-10 minutes until desired taste is reached and then remove the rosemary sprigs.

To make one pomegranate vodka cocktail

  • To a cocktail shaker add rosemary simple syrup, pomegranate juice, vodka and a handful of ice and shake for about 20-30 seconds until the cocktail shaker is frosty.  Strain into a cocktail glass and top with prosecco. Garnish with a sparkly rosemary sprig. Cheers & enjoy!
