To make a sparkly rosemary garnish simply run a rosemary sprig under a bit of water. Then, roll in sugar and set aside to dry.
To make the rosemary simple syrup
In a small saucepan over medium-high heat, combine sugar and water. Bring to a boil, stirring until sugar is dissolved. Add in the rosemary sprigs, stir and remove from heat. Let infuse for 5-10 minutes until desired taste is reached and then remove the rosemary sprigs.
To make one pomegranate vodka cocktail
To a cocktail shaker add rosemary simple syrup, pomegranate juice, vodka and a handful of ice and shake for about 20-30 seconds until the cocktail shaker is frosty. Strain into a cocktail glass and top with prosecco. Garnish with a sparkly rosemary sprig. Cheers & enjoy!
