Ingredients

  • 540 ml can butter beans, drained & rinsed
  • 1 pint baby, grape or cherry tomatoes
  • 2 bell peppers, cut into 1 inch pieces
  • 1 medium red onion, 1/2 inch slices
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/4 tsp chili flakes
  • 150-200 g feta cheese, sliced into 6-8 pieces
  • Garnishes: ground pepper, lemon wedges & a drizzle of olive oil
  • For serving: arugula, grains of choice or pita/crusty bread, Greek yogurt

Instructions

  • Preheat oven to 400F. Line a large sheet pan or baking sheet with parchment paper.
  • Add the rinsed beans, baby tomatoes, bell pepper pieces and sliced onion to the parchment lined sheet pan. Drizzle over 3 tbsp olive oil, garlic powder, dried thyme, dried oregano, salt and chili flakes. Toss to combine and make sure everything is well coated by giving it a good stir on the sheet pan. Nestle the feta pieces in between the seasoned vegetables and beans.
  • Add the sheet pan to the oven and bake for 25-30 minutes or until the feta has softened and the tomatoes are starting to burst.
  • Drizzle with extra olive oil, squeeze on some lemon juice and add some fresh ground pepper. Serve with arugula, grains of choice or pita/crusty bread and Greek yogurt if desired.

Notes

  • Enjoy this with a different green vegetable than arugula if desired. Try adding 1-2 cups chopped zucchini or a chopped bunch broccolini to roast along with the other vegetables.
  • If you can't find butter beans, cannellini beans would be a delicious alternative.
