Equipment

  • loaf pan
  • parchment paper

Ingredients

  • 3/4 cup mashed extra-ripe bananas (about 2 medium bananas)
  • 1/4 cup peanut butter
  • 1 cup rolled oats
  • 1/3 cup semi-sweet or dark chocolate chips

Optional additions

  • 1/2 tsp pure vanilla extract
  • pinch of sea salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup 100g chopped walnuts or pecans

Instructions

  • Preheat oven to 350 degrees F. Line a loaf pan with parchment paper and lightly spray with nonstick cooking spray to prevent the sides from sticking.
  • In a medium bowl, mash the bananas well, until it's mostly creamy and there are not many banana chunks left. Then add the peanut butter and mix well so the mashed banana and peanut butter are well combined.
  • Then, add the oats and chocolate chips and stir well to combine.
  • Add the mixture to the prepared loaf pan and smooth out the top.
  • Bake on the centre rack of the oven for 22-26 minutes, until the edges of the bars are starting to turn golden-brown and the bars appear set. Allow the bars to cool completely in the pan before slicing and serving.
