Ingredients

For the cranberry-rosemary simple syrup

  • 1 cup water
  • 1 cup sugar
  • 3 sprigs fresh rosemary
  • 1 cup fresh (or frozen then thawed) cranberries

For two Christmas cosmopolitan cocktails

  • 3 oz vodka
  • 2 1/2 oz pure cranberry juice
  • 1 oz cointreau
  • 1 1/2 oz cranberry-rosemary simple syrup
  • 1/2 oz lime juice

To make a pitcher of Christmas cosmopolitans

  • 1 1/2 cups vodka
  • 1 1/4 cups pure cranberry juice
  • 1/2 cup cointreau (or substitute with triple sec)
  • 3/4 cup cranberry-rosemary simple syrup
  • 1/4 cup lime juice

Garnish

  • fresh rosemary sprigs or sugared rosemary sprigs

Instructions

Make the cranberry-rosemary simple syrup

  • In a small pot bring the sugar and water to a boil, stirring so the sugar dissolves. Once boiling, turn to medium low and keep at a simmer, add the cranberries and rosemary sprigs and simmer for 3-4 minutes, until cranberries just start to burst. Remove from the heat and let it steep for 20 minutes. Strain the mixture to remove the cranberries and rosemary. Set aside to cool.

To make two Christmas cosmopolitan cocktails

  • To a cocktail shaker add the cranberry-rosemary simple syrup, vodka, cointreau, cranberry juice, lime juice and a handful of ice cubes. Shake well for about 20 seconds. Pour into your choice of two glasses (martini glass or coupe) and garnish with a plain or sugared rosemary sprig and/or cranberries.

To make a pitcher of Christmas cosmopolitans

  • If you want to make a larger batch when you’re entertaining, follow this recipe that serves about 6-8 and mix all of the ingredients in a pitcher and stir well.
    1 1/2 cups vodka
1 1/4 cups pure cranberry juice
    1/2 cup cointreau
    3/4 cup cranberry-rosemary simple syrup
    1/4 cup lime juice
When ready to serve, set out chilled martini glasses (if desired) or shake each serving in a martini shaker and then pour into martini or coupe glasses to serve!

How to make sugared rosemary for a garnish

  • Dip a sprig of fresh rosemary in the simple syrup or just in water, roll in white sugar, then let it dry before adding it as a garnish.

Notes

  • Serving in chilled glasses makes a big difference!
  • When making a pitcher for a crowd, it makes a huge difference to shake each serving over ice in a cocktail shaker before serving.
