Equipment

  • food processor
  • lemon zester
  • shallow bowl for serving

Ingredients

  • 8-10 oz (225-300 grams) softened plain goat cheese
  • 1 large garlic clove, grated or pressed
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp fresh minced chives
  • 2 tbsp fresh chopped parsley
  • 3 tbsp fresh chopped dill, plus more for garnish
  • 1 tbsp lemon juice
  • 1 tsp lemon zest (about zest from one small lemon)
  • ¼ tsp kosher salt
  • pinch of ground pepper plus more for garnish
  • pinch of chili flakes

Instructions

  • Add room temperature goat cheese, extra virgin olive oil, kosher salt, pepper, fresh minced chives, fresh chopped parsley, fresh chopped dill, lemon juice and lemon zest, salt, ground pepper and chili flakes to a food processor and process until smooth, scraping down the sides of the food processor as needed.
  • Alternatively, if you don’t have a food processor, mix the above ingredients in a large bowl with a fork until well incorporated and smooth.
  • If serving as an appetizer, spread the goat cheese in a shallow bowl and drizzle with a little bit of olive oil and garnish with fresh herbs and fresh ground pepper before serving.

Notes

  • Serve as an appetizer with crostini, pita chips, crackers and/or fresh vegetables.
  • Use as a spread for bagels or sandwiches, especially delicious on a turkey sandwich or wrap.
  • Toss the goat cheese spread with fresh cooked pasta and reserved pasta water for a quick pasta dish, topped off with fresh herbs.
