Whisk chicken marinade in a large bowl (3 tbsp extra virgin olive oil; 2 limes, zested and juiced; 2 tbsp ground chili powder; 1 tsp ground cumin; 2 tsp garlic powder; 1 tsp kosher salt; 1 tsp ground pepper; 1 tbsp honey or maple syrup).
Add the chicken thighs to the bowl of marinade, ensuring all of the chicken is covered with the marinade. Marinate at room temperature for 30 minutes
When ready to grill, preheat the barbecue grill to medium high, about 400-425F. Oil the grill well.
When the barbecue grill is heated, remove the chicken thighs from the marinade and place on the grill, cooking for 8 minutes to start. Then flip the chicken and cook for 5-7 minutes or until the internal temperature of the chicken reaches 165F.
Garnish with fresh cilantro and squeeze fresh lime over top before serving.
