I have been making appetizers & snacks for party’s for as long as I can remember and this Kettle Chip BBQ Chicken Nachos recipe might be one of my best!
The Super Bowl is coming up on Sunday and something you might not know about me is I’m a huge football fan. Since high-school I have been sitting down on Sunday’s to watch games and I originally started watching games because my Dad was always watching. What I love about the game is the tradition of getting together with family and friends, eating great food and watching sports. This continues to be something I love to do to this day!
This nacho recipe is inspired by my love for BBQ chicken pizza. I can remember having BBQ chicken pizza for the first time in high-school and thinking ‘this is the best thing ever!’ I love the combination of tangy BBQ sauce with the chicken & vegetables plus the saltiness of the crust and gooey cheese. So, enter the Kettle Chip BBQ Chicken Nachos with those exact flavours! What I also love about this recipe is the crunch you get from the kettle chips; they are the perfect vehicle for all of the delicious toppings.

Total Time: 20 minutes
Kitchen Equipment: baking sheet
1 x 200g bag Kettle Cooked potato chips
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 cups cooked chicken, shredded
1/2 red pepper, chopped
1/2 cup diced red onion
2-3 large white button mushrooms, sliced thin
1/2 cup barbecue sauce
small handful of parsley, chopped
Pre-heat your oven to 450F.
On a large baking sheet, spread out the kettle chips.
Mix the shredded chicken, chopped red pepper, diced onion, sliced mushrooms and barbecue sauce, stirring until everything is evenly coated.
Mix the mozzarella and cheddar cheese together in a separate bowl.
Next, layer half of the cheese over the chips and then, layer the chicken mixture over the chips evenly and top with the remaining cheese.
Bake in the oven for 8 minutes. Remove from the oven, top with parsley and serve immediately.
Some great additional toppings for the nachos would be sour cream or hot sauce.
