This easy chicken nachos recipe is inspired by my love for BBQ chicken pizza.
Tangy BBQ sauce with chicken and crunchy vegetables plus the gooey, melty cheese makes for the best kettle chip nacho bite!
Since high-school I have been sitting down on Sunday’s to watch football games. And these bbq chicken nachos make a regular appearance as the perfect game day appetizer. What I love about the game is the tradition of getting together with family and friends, eating great food and watching sports.
And truly, who wouldn’t love a big batch of these sheet pan nachos any day of the week. This nacho recipe would be a fun, delicious and quick dinner too that the whole family will love.

Kettle Chips: salty kettle chips pair perfectly with the bbq chicken flavours but you can swap for crunchy tortilla chips if desired
Chicken: cooked, shredded chicken is the best for this recipe; using a cooked rotisserie chicken from the store is an easy way to make this recipe quickly. However you can cook chicken breasts or chicken thighs and use those instead if preferred.
Barbecue sauce: use your favourite store-bought bbq sauce for these nachos, a spicy sweet barbecue sauce is my favourite to use.
Bell Pepper: I like to use a red pepper for it’s slight sweetness; you can use any colour of bell pepper you choose however.
Red Onion: crunchy, tangy red onion offers the perfect crunch
Mushrooms: mushrooms are a mainstay on bbq chicken pizza so they make an appearance in this recipe
Cheese: use a combination of shredded cheese, I like mozzarella and cheddar cheese; or substitute the mozzarella with monterey jack cheese
Parsley: chopped, fresh parsley is the perfect fresh topping to finish these nachos.
step by step process
Step 1: Pre-heat your oven to 450F.
Step 2: Spray a large rimmed baking sheet with cooking spray of choice (I like to use avocado oil spray).
Step 3: On a large baking sheet, spread out the kettle chips in a single layer of chips.
Step 4: Mix the shredded chicken, chopped red pepper, diced onion, sliced mushrooms and barbecue sauce together. Stir until everything is evenly coated.
Step 5: Mix the mozzarella and cheddar cheese together in a separate bowl.
Step 6: Layer the chips on the baking sheet followed by the chicken mixture over the chips and top with the cheese.
Step 7: Bake in the oven for 8-10 minutes until cheese is melted. Remove from the oven, top with parsley and serve immediately.
expert tips for making these barbecue chicken nachos
- If you want to add a spicy kick to these nachos add some sliced fresh jalapenos to the bbq chicken mixture. Or sprinkle the jalapenos on top once the nachos are cooked.
- An alternative to chopped fresh parsley as a topping is to use chopped green onions.
- You can prepare all of the ingredients ahead of time and store in the fridge in airtight containers. Take all of the ingredients out about a half hour before preparing the nachos. Then simple assemble and bake!

I think you get the best crunch from the kettle chips! They are the perfect vehicle for all of the delicious nacho toppings. Plus kettle chips are generally thicker so they hold up well as a nacho vehicle.
What if I don’t like mushrooms?
You can omit the mushrooms if you desire. I would recommend replacing them with another half cup chopped bell pepper.
