Ingredients needed to make these pesto pinwheels appetizer

Cheese: shredded mozzarella cheese is the main cheese you’ll need for these pinwheels; you can also use some parmesan cheese for garnish

Puff pastry: store-bought puff pastry that is defrosted is all you need for this recipe, just one sheet of puff pastry is needed

Basil Pesto: store-bought pesto brings lots of flavour, you can use a fresh basil pesto from the refrigerator section at the grocery store or a jarred basil pesto sauce from the sauce aisle; or, use your own homemade pesto!

Sundried tomatoes: tangy, savoury sundried tomatoes add the perfect burst of flavour; I like to use oil-packed sun-dried tomatoes and drain them from the oil first before dicing them

Prosciutto: thinly sliced salty prosciutto goes beautifully with the tangy dijon mustard and buttery puff pastry

Fresh herbs: a bit of fresh basil is the best garnish to add a pop of colour

How to make the best pesto pinwheels

Step 1: On a piece of parchment paper, roll out the defrosted puff pastry sheet into about 10×10 inch square.

Step 2: Spread the pesto on the puff pastry, leaving a 1/2 inch border.

Step 3: Place slices of prosciutto side-by-side on top of the pesto, try not to overlap them too much. Sprinkle the diced sundried tomatoes evenly across the prosciutto slices and then sprinkle over the shredded cheese.

Step 4: Start from the bottom and tightly / gently roll up into a log. Wrap the log in the parchment paper or plastic wrap and place in the freezer for 10 minutes while you preheat the oven to 400F.

Step 5: Line a large baking sheet with parchment paper and set aside.

Step 6: After 10 minutes, remove the puff pastry log from the freezer and cut into 1/2 inch slices using a sharp or serrated knife. You’ll end up with about 18-20 pinwheels.

Step 7: Place them on the baking sheet, making sure to leave space between each pinwheel and brush the top and sides of each with egg wash (1 egg whisked with 1 tbsp water) if desired.

Step 8: Bake for 22-28 minutes until golden brown. Leave on the baking sheet to cool.

Step 9: Allow to cool for 5-10 minutes and then serve on a plate.

How to make these pinwheels ahead of time

Bake the pinwheels and then allow them to fully cool. Arrange the baked pinwheels in a flat layer on a baking sheet and then freeze completely. Transfer the frozen pinwheels to an airtight container and store in the freezer for up to one month. Reheat the pinwheels directly from frozen on a parchment-lined baking sheet at 350F until warmed through.

Ingredients needed

Blackberry jam: blackberry jam has hints of sweetness from being made from fresh blackberries and pairs beautifully with brie cheese

Brie cheese: use soft brie cheese, rind removed, from a wheel of brie and cut into 1/2 inch cubes; creamy brie pairs lovely with sweet blackberries

Pecans: add a nice crunchy texture to these blackberry brie bites

Puff pastry: you can use store-bought puff pastry to make this recipe super easy, it’s sold at most local grocery stores; you’ll need one puff pastry sheet

Fresh thyme: I love the flavour of fresh thyme leaves combined with the blackberry jam and brie flavours

Honey: finish this appetizer with a drizzle of honey to add a touch of sweetness.

How to make these blackberry brie pinwheels

Step 1: Lay puff pastry (defrosted) on a piece of parchment paper, roll out into about a 10×10 inch square. (If your puff pastry already comes as a rolled out sheet, there’s no need for anymore rolling).

Step 2: Spread the blackberry jam on the puff pastry, leaving about 1/2-1 inch border.

Step 3: Sprinkle the brie cheese cubes on top of the blackberry jam, then sprinkle over the chopped pecans.

Step 4: Start from the bottom (short end of the dough) and gently roll up into a tight log, trying to tuck in any filling that spills out. Wrap the log in the parchment paper and place in the freezer for 10 minutes while you preheat the oven to 400°F (200°C).

Step 5: Line a large baking sheet with parchment paper and set aside.

Step 6: After 10 minutes, remove the puff pastry log from the freezer and cut into 3/4-inch slices using a sharp or serrated knife. You’ll end up with about 10-14 pinwheels.

Step 7: Place them on the baking sheet, making sure to leave space between each pinwheel and brush the top and sides of each with egg wash (1 egg whisked with 1 tbsp water) if desired.

Step 8: Bake for 20-25 minutes until golden brown and bubbling. Leave on the baking sheet to cool.

Step 9: Allow to cool for 5-10 minutes and then serve on a plate, drizzling the pinwheels with honey and sprinkling on fresh thyme leaves.

Expert tips

Be sure to take your puff pastry out of the freezer ahead of time so it has time to fully defrost before using. Generally you can defrost the puff pastry in the fridge overnight.

Let these pinwheels fully cool and take them with you on a picnic!

If fresh thyme isn’t your favourite, substitute with minced fresh rosemary in the Fall/Winter OR minced fresh basil in the Spring/Summer.

Other delicious flavour variations include using apricot or fig jam instead of blackberry jam. During the holiday season make these into the perfect holiday appetizers by replacing the blackberry jam with cranberry sauce or cranberry jam to make cranberry brie pinwheels for your holiday parties!

Common questions

Can I use another type of cheese other than brie cheese?
I’ve made other versions of this easy appetizer recipe using goat cheese and it works well. If preferred, substitute the brie cheese for 1/2 cup crumbled plain goat cheese.

What if I can’t find blackberry jam?
If you can’t find blackberry jam, blueberry, apricot, cherry or raspberry jam will work as well.

Can I use crescent dough to make these brie pinwheels?
I have not tested this recipe using crescent dough. As well, crescent dough can be thicker so I don’t recommend using it for this blackberry brie pinwheel recipe.

Can I make this appetizer ahead of time?
These flaky puff pastry pinwheels are best enjoyed fresh from the oven! You could make them an hour or two in advance, then warm them up in the oven at 300F for 5 minutes. They’re also delicious at room temperature!

How to store

These pinwheels are best served fresh from the oven! I don’t recommend storing them for longer than 2-3 hours.

Prosciutto: thinly sliced salty prosciutto goes beautifully with the tangy dijon mustard and buttery puff pastry

Gruyère cheese: shredded gruyere cheese is a creamy addition which pairs lovely with the prosciutto and dijon mustard; however, you can also use an old cheddar cheese or swiss cheese in it’s place if needed.

Egg wash: brush egg wash on the pinwheels before baking for a beautiful golden colour when baked!

How to make this sage prosciutto puff pastry appetizer

Step 1: On a piece of parchment paper, roll out the defrosted puff pastry sheet into about 10×10 inch square.

Step 2: Spread mustard on the puff pastry, leaving a 1/2 inch border.

Step 3: Layer the prosciutto slices side-by-side on top of the mustard, try not to overlap them too much. Sprinkle the cheese evenly across the prosciutto slices and then sprinkle over the freshly minced sage.

You’ll end up with about 18-22 pinwheels.

Step 7: Transfer pinwheels to the baking sheet, making sure to leave space between each pinwheel and use a pastry brush to brush the top and sides of each pinwheel with egg wash (1 egg whisked with 1 tbsp water) if desired.

Step 8: Bake pinwheels for 22-28 minutes until golden brown. Leave on the baking sheet to cool.

Step 9: Allow to cool for 5-10 minutes and then serve on a plate, sprinkling on more fresh minced sage leaves if desired.

Common Questions

Can I make these pinwheels ahead of time?
These flaky puff pastry pinwheels are best enjoyed fresh from the oven! You could make them an hour or two in advance, then warm them up in the oven at 300F for 5 minutes. They’re also delicious at room temperature!

What kind of cheese can I use instead of gruyere cheese?
An old cheddar cheese or swiss cheese would work well in place of gruyere cheese.

Can I bake and freeze these puff pastry pinwheels for later?
YES!

Will phyllo pastry work instead of puff pastry?
Phyllo pastry is much thinner than puff pastry and is made with different ingredients, so I wouldn’t recommend using it for this recipe.

Ingredients Needed to make this puff pastry appetizer

Puff Pastry: using store bought puff pastry is going to make your life so much easier! Make sure to take it out of the freezer ahead of time so it can defrost.

Apricot Jam: use your favorite brand of apricot jam. You can swap it out for fig jam, cranberry jam, cherry jam, plum jam or even strawberry jam!

Goat Cheese: not a fan of goat cheese? Feel free to use brie instead, just chop it up into small pieces.

Pecans: I love pecans in this puff pastry appetizer, but you could also use walnuts instead.

Thyme: a sprinkle of fresh thyme is going to make all the difference in terms of presentation, as well as flavor!

Step by Step Process to make these goat cheese jam pinwheels

Step 1: Roll out the defrosted puff pastry sheet into an approximate 10×10 square onto a piece of parchment paper or floured work surface.

Step 2: Spread the jam on the puff pastry, leaving a ½ – 1 inch border.

Step 3: Sprinkle the goat cheese crumbles on top, and then the chopped pecans.

Step 4: Starting from the bottom, tightly roll up the puff pastry into a log. Do this gently so the filling doesn’t spill out! Wrap the log in parchment paper or plastic wrap and place in the freezer for 10 minutes. Preheat the oven to 400F.

Step 5: Line a large baking sheet with parchment paper and set aside.

Step 6: After 10 minutes in the freezer, take the puff pastry log out and cut into 1-inch slices using a serrated knife or sharp knife. You should have about 10 pinwheels.

Step 7: Place them on the prepared baking sheet, leaving space between each one. Using a pastry brush, brush the tops and sides of the pinwheels with your egg wash.

Step 8: Bake for 25-30 minutes, or until golden brown and bubbling. Let cool on the baking sheet for 5-10 minutes.

Step 9: Place the cooled pinwheels on a serving plate and drizzle with honey and a sprinkle of fresh thyme.
