If you have pepperoncini peppers, you most likely have the brine on hand. However in a pinch you could try using pickle brine.
I have not tested the recipe with a Greek yogurt substitute, however, sour cream or blended cottage cheese could work. Note these substitutes could result in a dip that is a bit thinner.

Ingredients
- 200 grams softened plain cream cheese (scant 1 cup)
- 1 cup full fat plain Greek yogurt
- 3 tbsp pepperoncini brine
- ¼ cup fresh chopped dill
- ¼ cup fresh finely chopped green onions (about 3 green onions)
- 2 tbsp fresh minced chives
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground pepper
- ½ tsp kosher salt
- 1/2 cup diced pepperoncini peppers, drained of brine and diced
- Fresh cut vegetables, ruffled chips and/or crackers
Instructions
- Add the softened cream cheese, plain Greek yogurt, pepperoncini brine, fresh chopped dill, finely sliced green onions, minced chives, garlic powder, onion powder, kosher salt and ground pepper to a food processor, hand blender or. high-speed blender. Blend together until well-combined
- Add the blended mixture to a bowl and stir in the diced pepperoncini peppers.
- Serve with fresh cut vegetables, ruffled chips and/or crackers.
- Alternatively, store this dip in the fridge for up to 4 days. Give it a good stir before serving.
