This pomegranate aperol spritz is the perfect holiday cocktail!

If you loved my Winter Cranberry Aperol Spritz, you’re sure to love this take on the classic drink for the holiday season.

It’s bright, bubbly and easy to make with just 4 key ingredients.

While the classic aperol spritz is generally enjoyed in the summer season, with a few seasonal swaps you get a fresh take that’s lovely for the winter season.

The citrusy aperol pairs beautifully with the tangy pomegranate juice and bubbly prosecco; it’s a perfectly balanced holiday cocktail that everyone will love!

  • You only need 4 ingredients to make this holiday cocktail!
  • You can easily make a larger batch for when you’re entertaining guests.
  • It only takes 5 minutes to prepare.
  • Make it festive for the season by adding a sprig of fresh rosemary, a slice of sweet orange and pomegranate seeds.

Aperol: aperol is definitely the key to this aperol spritz! It’s a delicious Italian liqueur that serves as the perfect base for this spritz cocktail.

Prosecco: prosecco brings all the beautiful bubbles to this aperol spritz recipe.

Pomegranate Juice: the pomegranate flavor is the key to this drink so make sure to use the entire 2oz of pomegranate juice.

Club Soda: you’ll need to add a splash of club soda (or you can use sparkling water!)

Optional garnishes: a slice of orange is a classic garnish for an aperol spritz; plus, I love garnishing this cocktail with a fresh rosemary sprig to bring a festive flair; finally, try adding pomegranate arils (seeds) to show off this delicious cocktail.

how to make the best pomegranate aperol spritz

Step 1: Fill a large wine glass with ice – use full ice cubes or crushed ice, it’s really up to you!. Add the aperol and pomegranate juice and stir. Pour the prosecco into the glass and top with club soda.

Step 2: Garnish with an orange wedge, a fresh sprig of rosemary and a pomegranate (arils) seeds. Enjoy!

  • I love a classic wine glass for this perfect cocktail but in a pinch a stemless wine glass will work too!
  • Get festive with your garnishes! Make sure to use a rosemary sprig and an orange slice.
  • Want to make a larger batch? Simply multiply the recipe by how many guests you’re serving and mix all of the cocktail ingredients together in a pitcher. Serve by pouring this perfect drink into glasses for guests and garnish before enjoying.

Can I use something other than prosecco?
Aperol spritz is traditionally made with prosecco, but you can use cava or champagne if you don’t have prosecco on hand!

What if I only have campari on hand?
In a pinch you can use campari instead of aperol. But, just note campari has a slightly more bitter taste so you may want to add a bit more pomegranate juice to the cocktail.

Can I use sparkling water instead of club soda?
Yes, you can replace the club soda with an equal amount of sparkling water.

Ingredients

  • 2 oz aperol
  • 3 oz prosecco
  • 2 oz pomegranate juice
  • 1 oz club soda or sparkling water
  • For garnish: Orange wedge, fresh rosemary and pomegranate arils

Instructions

  • Fill a large wine glass with ice - use full ice cubes or crushed ice, it's really up to you!. Add the aperol and pomegranate juice and stir. Pour the prosecco into the glass and top with club soda.  
  • Garnish with an orange wedge, a fresh sprig of rosemary and a pomegranate (arils) seeds. Enjoy!

Notes

  • If you don’t have prosecco, champagne, cava or sparkling rosé will also do the trick!
  • Making a larger batch: want to make a large batch when entertaining guests? Just multiply the recipe by the number of guests and mix all the ingredients together in a pitcher. Then simply pour the finished cocktail into glasses and serve.
