With a combination of sourdough bread, two cheeses and topped with honey and fresh thyme, this will soon become one of your favourites too.

And it’s an easy recipe to whip up in the kitchen that anyone is sure to enjoy. It might just be the perfect grilled cheese sandwich!

Let’s face it: any cheese can be used to make a fantastic grilled cheese sandwich! I’ve tried everything from parmesan, goat cheese, mozzarella, swiss and brie. However, the combination of gruyere and cheddar cheese creates a perfectly gooey, melty, drool-worthy, melted cheese filling that just can’t be beat. Trust me – you’ve got to add these two kinds of cheese to your next shopping list!

Why you’ll love this Gruyere grilled cheese recipe

It’s delicious for lunch, dinner and maybe a midnight snack!

You only need 5 ingredients for this recipe.

The combination of two cheeses amps up the flavour even more.

The saltiness of the cheese pairs perfectly with the sweetness of the honey for the most craveworthy grilled cheese sandwich.

Ingredients needed to make this grilled cheese sandwich

Sourdough bread: The flavour of sourdough bread is my personal favourite. I love using sourdough for grilled cheese because it adds a little extra flavour and crisps up just perfectly. But in a pinch you can use any type of bread you enjoy.

Gruyere cheese: Nutty gruyère cheese brings the perfect saltiness and flavor when combined with the cheddar cheese. And, pairs lovely with the honey drizzle too!

Old cheddar cheese: The best match to the Gruyere cheese in this sandwich.

Unsalted Butter: A must to spread on the outside of the bread prior to cooking.

Honey: A drizzle of honey takes this Gruyere grilled cheese to epic levels! And, if you want to amp up the flavour even more, add a sprinkle of fresh thyme.

Thyme: A little sprinkle of fresh thyme goes a long way to bring all of the flavours of this grilled cheese recipe together. It adds a little punch of freshness!

How to make this grilled cheese sandwich recipe

Step 1: Grate both cheeses, mix together and set aside. Next, lay out your bread slices on a cutting board and spread one side of each piece of bread with butter.

Step 2: Heat a large non-stick frying pan over medium/medium-low heat and allow the pan to heat up for a couple of minutes.

Step 3: Place 2 slices of bread butter side down into the pan. Divide the cheese evenly between the 2 slices of bread and then place the other slices of bread butter side up to complete each sandwich.

Step 4: Cook for about 5 minutes. Then press each sandwich down a bit to flatten and flip the sandwich.

Step 5: Cook until the cheese is fully melted and bubbly and the bread is golden brown.

Step 6: Remove from the pan, drizzle with honey and fresh thyme leaves, and then serve immediately!

Expert tips

Make sure both cheeses are grated for this Gruyere grilled cheese sandwich. Grated / shredded cheese melts more evenly than slices and in this case the flavours of both cheeses meld together better when grated.

Amp up the flavour even more by adding a seasonal jam like fig jam or onion jam or even a few apple slices in this grilled cheese sandwich.

If you find the pan getting too hot and the cheese in the sandwich hasn’t fully melted, turn the heat down to low and cook it low and slow until it’s done.

Common questions

What if I can’t find Gruyere cheese?
If you don’t have any Gruyere cheese on hand, you can substitute with Swiss cheese or Emmental cheese. And, in a pinch you can just use just old cheddar cheese.

Do I need to drizzle honey over the sandwich?
You don’t need to BUT I highly recommend it! The honey adds just a touch of sweetness for the perfect salty-sweet combination with the cheese.

As a part of a group of fellow Canadian creatives, we each created recipes with Jazz apples and a mystery ingredient! My ingredient was cheddar as selected by the lovely Betty from Stems and Forks.

Apples are the perfect baking ingredient in my books but I wanted to give you a recipe that can be enjoyed many different ways! A simple, savoury tart was the way to go, bringing together the tangy-sweet Jazz apples with complementary ingredients.

What’s in a savoury apple cheddar tart?

Jazz apples: The star of this tart recipe, they bake beautifully with the other flavours.

Cheddar cheese: Use an old or sharp cheddar cheese in this recipe as the saltiness pairs really well with the apples.

Leeks: Sauteing the leeks before cooking the tart brings about a beautiful, mellow flavour that enhances the apples and cheddar.

Fresh thyme: This herbs’ floral notes is a lovely addition to the tart flavours.

Frozen puff pastry: This is a game-changer in the kitchen. Simply thaw the puff pastry according to package directions and then use! Makes this recipe come together oh so quickly.

Now that we’ve made our way into September I thought I’d ease into somewhat cooler temperatures with an easy salad full of kale, apple, cheddar and chickpeas so enter the Kale, Apple and Cheddar Salad with Spicy Chickpeas.

I was struggling with what to make for dinner this past week because I’m so ready to start cooking cozy autumn dishes but its still pretty hot here in Calgary. So, this salad hit all of my fall-inspired cravings (apple, cheddar, spicy chickpeas) but in a refreshing way with the crunchy kale.

The spicy chickpeas add the perfect warming note to this salad and you can even make this ahead of time, mix it all together and bring for lunch with the chickpeas on the side until you’re ready to eat. This Kale, Apple and Cheddar Salad with Spicy Chickpeas is versatile enough to eat for dinner too and one to enjoy into the cooler weather.

So grab those cozy ingredients and a fresh batch of kale – this salad is just waiting to be made!

Total time: 45 minutes
Servings: 4
Equipment: baking sheet, parchment paper, large mixing bowl

Ingredients:

1x 540ml can of chickpeas (drained, rinsed and patted dry)
6 cups (packed) of kale, chopped
1 granny-smith apple, sliced thin
1/4 cup pumpkin seeds
1/2 cup old cheddar, crumbled
1 tsp olive oil
1 1/2 tsp chili powder
1/2 tsp sea salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
1/4 tsp cayenne pepper

Dressing:

3 tbsp red wine vinegar
1/4 cup olive oil
1 tbsp honey
1 tsp dijon mustard
1/4 tsp salt
pinch pepper

Instructions:

Pre-heat your oven to 400F and line a baking sheet with parchment paper.

Drain and rinse the can of chickpeas, then pat dry between a couple sheets of paper towel. Transfer the chickpeas to the parchment-lined baking sheet.

Mix together your chickpea spice mix (chili powder, sea salt, garlic powder, onion powder, paprika and cayenne pepper).

**Cook’s Note: If you want to turn down the heat level on the chickpeas, opt to use only an 1/8 tsp of cayenne in the spice mix

On your baking sheet, drizzle 1 tsp olive oil and gently mix the chickpeas on the sheet with the oil. Then sprinkle your season mixture over the chickpeas, rolling them around on the baking sheet until they are well-covered.

Roast the chickpeas for 15 minutes, then take out of the oven and roll around on the baking sheet. Then bake for another 10-15 minutes until chickpeas are crispy.

While the chickpeas are cooking, prepare the rest of your salad ingredients and the dressing.

When you are ready serve, mix the kale with the dressing only and then add in the apple, pumpkin seeds and cheddar and gently toss again. Top with the chickpeas and serve!
