Lately we’ve been making recipes that ‘transport us’ somewhere else and this Tropical Rum Slushie is no exception!

Tropical Rum Slushie
It’s looking like for the foreseeable future we’ll be staying pretty close to home. We’ve sadly had to cancel some vacations and the rest are pretty much up in the air. So, we’re making a conscious effort to enjoy recipes that take us somewhere else, even just for a minute.

The second I took a sip of this slushie I immediately felt like I was on vacation! So for this long weekend and the summer to come I’ll be making these slushies while we enjoy our backyard oasis.

How do you make this easy frozen alcoholic drink?

Fruit: Frozen mango and pineapple are truly tropical flavours to me. They go perfectly with the rum in this boozy slushie.

Lime: Lime juice adds just a bit of tartness and also makes a great garnish.

Rum: When I think of making a tropical drink, rum comes to mind as the spirit of choice. It just goes so well with the fruity flavours!

Honey, maple syrup or agave syrup: Use one of these sweeteners to help tone down the rum just a bit.

Ice: Use a couple of ice cubes to get that perfect slushie texture.

Tropical Rum Slushie

Escape to the tropics with this Tropical Rum Slushie! This easy alcoholic drink has just 5 ingredients and is blended up for the perfect summer sip.

Ingredients

  • 2 cups frozen mango
  • 2 cups frozen pineapple
  • 1 1/2 tbsp maple syrup, honey or agave syrup
  • juice of one lime
  • 3/4 cup rum
  • ice
  • lime slices or mint to garnish

Instructions

  1. Add frozen mango, frozen pineapple, maple syrup, lime juice and rum to a blender. Blend on high until everything is combined. Add in a couple ice cubes and blend to your desired slushie texture.

  2. If the mixture is too thick, add a bit of water & blend until desired consistency is reached. Garnish with lime or mint & enjoy!

Recipe Notes

  • Stores well in the fridge for a couple of hours. When ready to serve, blend again with a couple more ice cubes to reach desired slushie consistency.

The best thing about this drink is it’s EASY to customize to your tastes! A couple other delicious fruit combinations you may want to try are:

  • Strawberry & Mango
  • Pineapple & Banana
  • Mangos & Peaches

And, if making this without rum is your thing, you could try substituting with coconut water or coconut milk.

Buying fresh herbs in the Winter & not sure how to Buying fresh herbs in the Winter & not sure how to store them to make sure they keep longer?! I’ve put together my top 4 tips for storing fresh herbs:⁠⠀
⁠⠀
-Soft herbs like parsley, basil, cilantro and dill have ‘soft’ stems so store them like you would fresh flowers. For parsley, cilantro and dill, cut about 1 inch off the stems, place in a jar with water, cover with a plastic produce or ziploc bag and store in the fridge. Keep in the fridge and replace the water every couple of days. These can last about 2 weeks so when ready to use, take the amount you need and wash!⁠⠀
⁠⠀
-Basil is a bit of a tricky one as it’s very delicate. If purchased from the grocery store, it’s likely grown in a greenhouse and comes already packaged. I usually leave this at room temperature and use it within a couple of days. If I’m cutting basil from the garden, I’m generally going to use it right away. However, you could follow the same instructions as the soft herbs BUT leave it in the water at room temperature.⁠⠀
⁠⠀
-Hard herbs like rosemary, thyme and sage store well when wrapped in a slightly damp paper towel, then wrapped in plastic and put in the fridge. They will last 1-2 weeks.⁠⠀
Mint is technically a hard herb because of its stem, however, I’ve found I can store either way mentioned above and it still does well.⁠⠀
⁠⠀
-And, the best way to clean any herbs that you’re using is to get a bowl of cool water and dunk the herbs a couple of times so that any dirt sinks to the bottom. Refresh the bowl with clean water before moving on to another herb.⁠⠀
