By using super-ripe red plums you get a naturally sweet jam that you could literally just eat with a spoon.

It’s a versatile jam perfect on toast with ricotta or even on a cheeseboard.

It’s stone-fruit season so I’m enjoying plums any way I can! One of the best ways is to make an Easy Plum Jam because it’s just so versatile.

Plums, maple syrup, lemon juice and just a pinch of cardamom simmer together to make the most delicious jam. And everything is done right on the stove-top in under 30 minutes!

Easy Plum Jam

Course: Breakfast, brunch

This Easy Plum Jam is made using super-ripe red plums to get a naturally sweet, versatile jam that can be enjoyed for breakfast, on a cheeseboard or for dessert!

Ingredients

  • 8 ripe, red plums
  • 3 tbsp water
  • 2 tbsp maple syrup
  • 1 tsp lemon juice
  • 1/4 tsp cardamom

Instructions

  1. Pit and quarter plums.

  2. In a medium pot combine all of the ingredients and bring to a simmer over medium heat.

  3. Simmer over medium heat, stirring occasionally for 25 minutes until the plums break down and become a jammy-like consistency.

  4. Taste and add a touch more maple syrup if needed.

  5. Remove from the heat and let cool fully. The jam will continue to thicken slightly as it cools.

  6. If a smoother consistency is preferred, pulse the jam in a blender a couple of times once cooled. Then store in the fridge for 1.5 weeks or in the freezer for up to 2 months.

Depending on how ripe the plums are, you may need to add a touch more maple syrup to adjust to your tastes.

One of my favourite ways to enjoy this Easy Plum Jam is on toasted sourdough with creamy ricotta cheese.

But, you can also make this into a dessert! Use as a topper to vanilla ice cream or crush up some graham crackers, add some mascarpone cheese or greek yogurt and top with the Easy Plum Jam for a ‘cheesecake.’

Buying fresh herbs in the Winter & not sure how to Buying fresh herbs in the Winter & not sure how to store them to make sure they keep longer?! I’ve put together my top 4 tips for storing fresh herbs:⁠⠀
⁠⠀
-Soft herbs like parsley, basil, cilantro and dill have ‘soft’ stems so store them like you would fresh flowers. For parsley, cilantro and dill, cut about 1 inch off the stems, place in a jar with water, cover with a plastic produce or ziploc bag and store in the fridge. Keep in the fridge and replace the water every couple of days. These can last about 2 weeks so when ready to use, take the amount you need and wash!⁠⠀
⁠⠀
-Basil is a bit of a tricky one as it’s very delicate. If purchased from the grocery store, it’s likely grown in a greenhouse and comes already packaged. I usually leave this at room temperature and use it within a couple of days. If I’m cutting basil from the garden, I’m generally going to use it right away. However, you could follow the same instructions as the soft herbs BUT leave it in the water at room temperature.⁠⠀
⁠⠀
-Hard herbs like rosemary, thyme and sage store well when wrapped in a slightly damp paper towel, then wrapped in plastic and put in the fridge. They will last 1-2 weeks.⁠⠀
Mint is technically a hard herb because of its stem, however, I’ve found I can store either way mentioned above and it still does well.⁠⠀
⁠⠀
-And, the best way to clean any herbs that you’re using is to get a bowl of cool water and dunk the herbs a couple of times so that any dirt sinks to the bottom. Refresh the bowl with clean water before moving on to another herb.⁠⠀
