Weekends call for this delicious Swiss Chard, Goat Cheese and Leek Frittata!

This is one of my favourites to make for breakfast, lunch or dinner. And you can literally use whatever cheese and veggies you have on hand too. What are you making this weekend?

I haven't taken the time to officially celebrate that it's Spring so this weekend I'm making this Minty Cucumber Gin Spritz!

INGREDIENTS
6 slices cucumber
10 mint leaves
2 ounces gin
8-10 ounces prosecco or other white sparkling wine
extra mint leaves and cucumber slices for garnish
ice

INSTRUCTIONS
Add mint leaves, cucumber slices and gin to a cocktail shaker or mason jar.

Use a muddler or wooden spoon to crush and mix mint, cucumber and gin so the flavours get released and then let sit for 5 minutes.

Strain into two champagne flutes (or glass of your choice) and pour 4-5 ounces of prosecco into each glass.

Add some mint leaves and fresh slices of cucumber to garnish and 1-2 ice cubes and enjoy!

I've been loving this comforting Roasted Harvest Vegetable Bowl.

Brussels Sprouts are such an easy and delicious side that remind me of gathering around the table with family and friends (which for now we're doing virtually via Zoom!) You can top these Sheet Pan Roasted Brussels Sprouts with pancetta or bacon to add even more flavour!

A weekend favourite: Easy Skillet Coconut & Almond Granola

With just 8 ingredients and one pan, this granola comes together ever so easily for the most delicious breakfast bowl. Serve with yogurt + your favourite toppings!

Lately I've been sipping on this Mojito Smoothie while I sit in the sun in my backyard. Take a little escape with this recipe this weekend:

INGREDIENTS:
1 granny smith apple, chopped
12 large mint leaves
1 cup spinach
1/2 tsp honey or maple syrup
2 tbsp shredded coconut
juice of half a lime
1 cup coconut milk (from a carton)
2 ice cubes
Optional: add in your favourite protein powder

INSTRUCTIONS:
Add all of the ingredients to the blender.

Then, simply blend on high until everything is incorporated. Sip & enjoy!

One of my go-to recipes as of late, these Quick White Beans with Tomatoes & Kale.

Made with simple ingredients from the pantry & fridge, this dish comes together quickly for a weekend or weeknight. And, also pairs well with a glass of red wine for a date-night in.
