I seriously think these apple blondies are one of my BEST Fall desserts. They are soft, chewy and buttery and they have the perfect amount of cinnamon-spice; these apple blondie bars are truly a favorite recipe of mine during this season.

Apples: The star of the show, fresh apples are a must for this recipe! I like to use Gala apples in this recipe as they have a litle bit of sweetness but are more tender apples so they bake nicely in these blondies.

- In a medium mixing bowl, whisk together melted butter, brown sugar, an egg and vanilla extract to form a deliciously caramel mixture.
- Next add the dry ingredients (all-purpose flour, baking powder, ground cinnamon, ground nutmeg and salt) into the wet ingredients.
- Using a spoon or spatula, stir all of the ingredients together until combined. You’ll have a delicious dough that’s fairly thick.
- Then, you’ll fold in the chopped apples; add the dough to a parchment paper lined square baking pan and bake in a preheated oven

I would suggest substituting the flour in the recipe with a 1:1 gluten free baking flour to make this recipe gluten-free.

YES! If using a 9×9 baking pan, blondies will not take as long to bake. Start checking doneness around 20-22 minutes of cooking time.

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1 egg
- 1 1/2 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1 tsp baking powder
- 1 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1 large apple, peeled & cored, cut into 1/4 inch pieces
Instructions
- Pre-heat oven to 350F and line an 8x8 pan with parchment paper. (If using a 9x9 pan see notes below on baking time).
- In a mixing bowl, mix together melted butter and brown sugar until combined. Add the egg and vanilla extract and mix well.
- Mix dry ingredients into wet, stirring until everything comes together and no clumps of flour remain. Fold in the chopped apples to the batter.
- Transfer the batter into the prepared pan (it will quite thick like cookie dough) and smooth out the top so the batter reaches the edges of the pan.
- Bake 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool, cut into 9 or 12 squares and enjoy!
