Baked brie like this Easy Peach & Pecan Baked Brie and this Blackberry Baked Brie with Walnuts & Honey are some of my go-to appetizers to enjoy at gatherings in the summertime. But, I wanted to switch things up and make a grilled brie you can enjoy at home or camping!

Ingredients needed to make this brie cheese appetizer
Brie: you need one wheel of brie, about a 250-350g double cream brie works best
Olive oil: just a little olive oil helps to saute the berries before the brie gets added to the cast iron pan
Fresh berries: a mix of fresh berries brings a ton of flavour but you can use your favourite mix
Balsamic vinegar: you’ll use a bit of balsamic vinegar on the top of the brie and then some in the berries
Maple syrup: you could swap out maple syrup for honey if you don’t have it.
Basil: fresh basil adds a lovely pop of colour and pairs delightfully with the berries and brie
Bread: I love to serve this with a crusty bread like baguette, sliced and grilled
How to make this grilled brie with fresh berries
Step 1: Preheat the barbecue to medium heat (375F – 400F). Score the brie with a sharp knife and rub 1 tsp balsamic vinegar on top and set aside on a plate.
Step 2: Once the barbecue is hot, add the cast iron pan to the grill and add the olive oil to the pan. Add the berries and 2 tsp balsamic vinegar and stir. Cook for 3-4 minutes to soften the berries.
Step 3: Once the berries have softened and are starting to simmer, nestle the brie in beside the berries and close the grill. Cook for about 5-6 minutes more or until the brie cheese is starting to bubble. You can toast the bread slices on the grill too during this time if you’d like.
Step 4: Once the brie is melted to your liking, drizzle over the maple syrup or honey over the brie and berries and then remove from the grill. Before serving top the brie with a few scoops of the berries and garnish with fresh basil. Serve with the toasted baguette or your cracker of your choice.
Expert tips
- Prep all of your ingredients and place on a baking sheet to take out the grill so you have everything you need.
- Once the baked brie is done on the grill, serve directly from the cast iron pan OR transfer to a baking dish / serving platter / serving plate for guests to dig right in.
- The baked brie is best when it’s served straight off the barbecue, as that’s when it’ll be the most melty! It will start to harden after 15-20 minutes, but will still be delicious!
- If you want to make crostini off the grill, preheat your oven to 400°Fahrenheit and slice a baguette into 1-inch thick slices. Brush the baguette slices with olive oil and place on a single layer on your baking sheet. Toast for 10 minutes, making sure to flip the slices halfway through. You could also use a sourdough baguette for this!
Common questions
Do I need to remove the rind from the brie wheel?
The cheese rind on the brie is edible! What you will need to do is score the top of the brie which will make it much easier to eat and dip into with the grilled bread.
Can I use frozen berries for this recipe?
I highly recommend using fresh berries only for this recipe since they’re all in season during the summer! Frozen berries hold a lot of water and can make this appetizer watery if used.
How to store
This brie cheese is best enjoyed as soon as it’s made! However, if you have leftover brie it can be stored in an airtight container in the fridge for up to 2 days.
To reheat, place in an oven at 325°F on a piece of parchment paper or in the microwave. You can also serve it cold by slicing up the baked brie and adding it to a sandwich!

This was amazing! I used blueberries and strawberries (that’s all I had). I have done a brie many different ways but I do believe this is the favorite.
