For holiday parties I love making my cranberry pecan baked brie for an easy appetizer, but I wanted to create a summer version!
This summer peach pecan baked brie is made with fresh peaches so it’s perfect for summer picnics, barbecues and family gatherings!

Ingredients Needed to make this simple appetizer
Peaches: fresh sweet peaches are the star of this summer appetizer, make sure they’re ripe! In a pinch however you could use peach jam or peach preserves instead of fresh peaches.
Pecans: if you don’t have pecans on hand you can swap them out for walnuts.
Honey: you could swap out honey for maple syrup if you don’t have it.
Brie: you only need one wheel of brie. I recommend using double cream brie, which is super rich and creamy.
Fresh herbs: add a sprinkle of herbs, fresh thyme would be absolutely delicious, if desired
How to make the best peach pecan baked brie
Step 1: Preheat your oven to 375°Fahrenheit and line a baking dish with parchment paper. Place brie on the parchment paper and lightly score the top of the rind of brie in a diagonal pattern with a sharp knife.
Step 2: Top the brie wheel with the fresh chopped peaches, chopped pecans, a drizzle of honey (2-3 tablespoons) and a sprinkle of ground cinnamon.
Step 3: Bake the brie in the oven for 18-22 minutes, or until the cheese is starting to bubble. Top with a few leaves of fresh thyme if desired. Serve with crackers or crostini!

If you have a nut allergy, remove the pecans from the recipe. Once the brie has been baked, add a sprinkle of granola to get that crunch!

The baked brie is best when it’s served straight out of the oven, as that’s when it’ll be the most melty! It will start to harden after 15-20 minutes, but will still be delicious!

To make crostini to serve with the baked brie, preheat your oven to 400°Fahrenheit and slice a baguette into 1-inch thick slices. Brush the baguette slices with olive oil and place on a single layer on your baking sheet. Toast for 10 minutes, making sure to flip the slices halfway through. You could also use a sourdough baguette for this!

Make this peach pecan brie the centerpiece of a cheese board! Bake the brie and let it sit for about 5 minutes. Then gently use the parchment paper edges to lift the brie out of the baking dish and place in the center of your cheese board. Fill in the rest of the cheese board and enjoy!

No, the rind on the brie is edible! What you will need to do is score the top of the brie which will make it much easier to eat.

Can I use frozen peaches to make this brie cheese recipe?
I would recommend using only fresh fruit for this recipe. Frozen peaches hold too much water and will make this recipe a tad too soggy.
Storage
I recommend serving the baked brie on the day it’s made. Any leftovers can be stored in an airtight container in the fridge for up to 2 days.
To reheat, place in an oven at 325°Fahrenheit on a piece of parchment paper or in the microwave. You can also serve it cold by slicing up the baked brie and adding it to a sandwich!
