Spring has finally sprung and I am so excited to dive into all of the fresh produce with this Spring Toast with Radishes, Pea Shoots and Feta.

Fresh pea shoots paired with crunchy radishes and feta on toasted sourdough, plus a sprinkle of red chile flakes makes the perfect Spring bite!

Toasts are so versatile; you can mix and match different toppings based on the season and they’re also great to serve guests when entertaining!

I absolutely love this Springtime combination of flavours; you can find radishes and pea shoots readily available at the grocery store or market.

Spring Toast with Radishes, Pea Shoots and Feta

Fresh pea shoots paired with crunchy radishes and feta on toasted sourdough plus a sprinkle of red chile flakes make this Spring Toast the perfect Springtime bite for lunch, a light dinner or as an appetizer when entertaining!

Ingredients

  • 4 slices sourdough toasted
  • extra virgin olive oil
  • 1/4 cup greek yogurt
  • 1/2 cup feta cheese crumbled
  • 1/2 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • pinch pepper
  • 1-2 ounces fresh pea shoots
  • 5 radishes sliced
  • red chile flakes for garnish
  • 1/4 lemon
  • 1/4 cup feta crumbled, for garnish

Instructions

  1. Pre-heat oven to 350F.

  2. Place bread slices on a parchment paper-lined baking sheet and brush each slice with olive oil.

  3. Toast bread for 7 minutes.

  4. Prep your vegetables and reserve 12 slices of radishes to top each toast.

  5. Use a fork to mix together greek yogurt, feta cheese, pinch of pepper, lemon juice and olive oil, breaking up the feta with the fork as you mix.

  6. Once toast is slightly cooled, top each slice with 2 tbsp of the feta mixture, a layer of radishes (dividing all of the radishes between the bread slices), pea shoots, 3 slices of radishes, a pinch of red chile flakes, squeeze of lemon and sprinkle of feta crumbles.

Recipe Notes

  • Serve these Spring toasts as single slices for a meal OR cut in halves or thirds to serve as appetizers when entertaining guests!

These Spring Toasts would make a delicious lunch, a light dinner or cut them in half to serve to guests at your next get-together.

    Looks like a great little snack or lunch! I love using fresh seasonal produce, especially if I can grow it myself. Luckily pea shoots and radishes are two of the easiest spring vegetables to grow! You could even use radish sprouts instead of pea shoots!

      I never even thought of using radish sprouts but I LOVE that idea too! So easy to mix & match this recipe with fresh, seasonal produce from the market or your garden. AND you’ve inspired me to try to grow pea shoots and radishes I think this year!

    Oh my goodness, Jess! These are so gorgeous! I freaking love bread, cheese, and fresh veggies, so this is the perfect springtime trifecta for me AND my inner fat kid. Haha. I’m totally going to make something like this soon. I’ve been itchin’ for a good crostini.

I love this recipe because it really is a ‘choose your own adventure.’ Use whichever ingredients are your favourite!⁠⠀
⁠⠀
Here's how I made mine (don't forget to save this post for brunch later):⁠⠀
⁠⠀
INGREDIENTS⁠⠀
4 corn or flour tortillas⁠⠀
4 large eggs, scrambled⁠⠀
1 cup shredded sweet potato or regular potato⁠⠀
1/2 cup thinly sliced red onion⁠⠀
1/2 cup thinly sliced red pepper⁠⠀
3 tbsp extra virgin olive oil (divided)⁠⠀
1/4 cup shredded cheese⁠⠀
salt & pepper⁠⠀
suggested garnishes: sliced radishes, chopped cilantro, hot sauce, salsa, avocado, guacamole, diced tomato or cherry tomatoes, sour cream, sliced cabbage, kale or other greens for garnish⁠⠀
hot sauce⁠⠀
⁠⠀
⁠⠀
INSTRUCTIONS⁠⠀
In a frying pan on medium heat, warm the tortillas, flipping to warm each side 2-3 minutes. Then wrap in a kitchen towel to keep warm.⁠⠀
⁠⠀
To the same frying pan add 1 tbsp olive oil and spread out shredded sweet potato. Let cook until it starts to brown around the edges, add a pinch of salt and pepper, stir and then cook a bit more until your desired doneness. Remove from pan and set aside.⁠⠀
⁠⠀
To the same pan, add another 1 tbsp olive oil and pepper and onions. Sauté for about 5-8 minutes until softened. Remove from pan and set aside.⁠⠀
⁠⠀
Lastly, whisk eggs in a bowl and then add 1 tbsp olive oil to the pan along with eggs. Cook, stirring until eggs are scrambled to your desired consistency.⁠⠀
⁠⠀
Assemble your tacos by spooning sweet potatoes onto each tortilla. Then layer cooked pepper and onions, scrambled eggs and top with your garnishes of choice. ⁠⠀
Enjoy warm!⁠⠀
