Summer Cheese & Charcuterie Board

Let’s be real. I love cheese and I love entertaining.

We have a couple of summer weekends left and summer IS the time to entertain! When I need an easy appetizer or snack to accompany a lovely weekend afternoon, cheese & charcuterie is my go-to.

Using my favourite cheeses and some summer fruits, I’ve put together an easy summer cheese & charcuterie board that will wow your guests (and you!)

One of the ‘rules of thumb’ for cheeseboards is to start with one hard cheese, one soft and one smelly cheese. BUT given I’m not a fan of smelly cheese I like to opt for a different flavoured cheese to round out the flavours.  I also like to add a spicy meat to the board to round and some pickles for saltiness.

Here is a checklist to help you create your own summer cheese & charcuterie board:

Cheeses: 
– Saint Andre (soft)
– Dill Havarti (flavour/medium)
– Manchego (hard)

Fruit: fresh peaches and apricots

Meat: spicy chorizo

Crackers: rosemary & olive oil triscuits; plain crisps; rosemary-raisin-pecan raincoat crisps

Garish: fresh dill and wild blueberry spread

You can mix and match with some of your favourite cheeses and flavours using many of the fruits of the season too and I’m sure you’ll come up with some amazing flavour combinations.

Hand-crafted in British Columbia, I couldn’t think of a better gin to add to this cocktail. (Recipe below) #sponsored

To me a French 75 is just perfect to cheers with BUT I’m shaking things up a bit by adding lavender bitters to complement the botanicals of the @empress1908gin . With the Empress Gin’s subtle earthy notes, the lavender works just beautifully to make a lovely Spring sip. Plus the gorgeous colour transforms from a vivid indigo blue to a more pink hue with the addition of the fresh lemon juice.

So, let’s cheers to a more bright & beautiful season upon us! 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
French 75 with lavender bitters
Ingredients:
1 ½  oz gin
¾ oz  freshly squeezed lemon juice
¾ oz simple syrup
2-3 dashes lavender bitters
Top with prosecco & a lemon twist
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
Shake gin, lemon juice, simple syrup and lavender bitters over ice. Strain into a coupe or flute. Top with prosecco & garnish with a lemon twist and/or lavender sprig.

Tip: Need to make simple syrup? In a small saucepan combine ½ cup sugar and ½ cup water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool.

2 tbsp unsweetened shredded coconut use sweetened if that's all you have⁠⁠

1 1/2 cups coconut milk almond milk or coconut water work too⁠⁠
