<p class="wp-block-paragraph"><strong>Cranberries:</strong> I like to use fresh cranberries because a bag of cranberries is so readily available in the Fall and Winter; but in a pinch use frozen instead</p>



<p class="wp-block-paragraph"><strong>Pears:</strong> &nbsp;Pears provide some natural sweetness to this recipe; you can use green or red Anjou, Bartlett or even Bosc pears in this cranberry chia jam recipe</p>



<p class="wp-block-paragraph"><strong>Honey: </strong>&nbsp;Honey adds a nice touch of sweetness to balance out the tart cranberries; you can substitute with pure maple syrup if desired.</p>



<p class="wp-block-paragraph"><strong>Seasonings:</strong> A touch of cinnamon and a pinch nutmeg round out the flavours.</p>



<p class="wp-block-paragraph"><strong>Orange zest:</strong> Zest from an orange goes so well with cranberries!</p>

<h2 class="wp-block-heading">How to make this delicious recipe</h2>



<ol id="isPasted" class="wp-block-list">
<li>Mix together the water, cranberries, chopped pears, honey, cinnamon, nutmeg and orange zest in a medium saucepan.</li>



<li>Bring to a simmer over medium-high heat. Once the mixture is bubbling and cranberries are starting to pop, turn to low-medium heat and stir in the chia seeds.</li>



<li>Cook stirring frequently until desired texture is reached &ndash; you want the pears to be very soft and cranberries to start breaking down / bursting, about 15-20 minutes. If you prefer a more &lsquo;smooth&rsquo; mixture, use a potato masher to crush the ingredients in the pan and then let the mixture cool fully.</li>



<li>Once cool, store the jam in your fridge for 1-1.5 weeks in a glass jar or freeze in airtight containers for up to 2 months. Defrost frozen jam in the fridge before enjoying.&nbsp;</li>

<li>With turkey: I like to use this cranberry chia jam as an updated version of homemade cranberry sauce on the Thanksgiving table with turkey dinner!&nbsp;</li>



<li>Baked brie: Use this cranberry pear chia jam as a topping for baked brie cheese. Preheat the oven to 375F; place the brie cheese in a parchment paper lined baking dish; top the brie with about 1/3 cup of the jam; and then bake it for about 15-20 minutes until the brie is just starting to bubble.</li>



<li>Cheeseboard: Use this cranberry jam as a wonderful addition topper for cheese on a holiday cheeseboard.</li>

However, you could try using 1/2 cup orange juice and 1/2 cup water to enhance the orange flavor. You might end up with more of a cranberry orange chia jam versus cranberry pear jam.</p> </div> </div>

<p class="wp-block-paragraph"><strong>Cranberry sauce:</strong> use one can of whole berry Cranberry sauce for all the cranberry flavour (you don&rsquo;t need to use fresh cranberries)</p>



<p class="wp-block-paragraph"><strong>All purpose flour:</strong> all purpose flour is a must to bring the crumble mixture together which is used for the crumb topping and bottom crust</p>



<p class="wp-block-paragraph"><strong>Sugar: </strong>use a combination of white (granulated) sugar and brown sugar to add sweetness</p>



<p class="wp-block-paragraph"><strong>Butter: </strong>melted butter brings the crumble mixture together</p>



<p class="wp-block-paragraph"><strong>Cinnamon: </strong>a touch of cinnamon brings together the flavours in the oat crumble</p>

<h2 class="wp-block-heading">How to make these cranberry oatmeal bars</h2>



<ol id="isPasted" class="wp-block-list">
<li>Preheat the oven to 350F and line a square 8X8 square baking pan with parchment paper, leaving an overhang of parchment paper to help remove the cooked bars later. Grease the pan well with butter.</li>



<li>In a medium bowl whisk together flour, oats, granulated sugar, brown sugar, cinnamon, baking soda and salt. Stir in melted butter and mix until fully combined, creating a crumbly mixture.</li>



<li>Save 1 cup of the crumble crust mixture and mix with &frac14; cup finely chopped pecans and set aside. Pour the remaining crumb mixture into the baking pan and press into an even, flat base layer with your hands.</li>



<li>Pour the cranberry sauce onto the crumble crust base layer in the pan and spread into an even layer.</li>



<li>Finally, sprinkle the 1 1/4 cups crumble crust mixture you saved over the cranberry mixture in an even layer.</li>



<li>Bake for 40-45 minutes or until the crumble crust topping is set and the cranberry sauce might be bubbling around the edges.</li>



<li>Remove from the oven and let it completely cool in the pan or they will fall apart if not completely cooled before cutting. You can also place them in the fridge to help cool faster.</li>



<li>Once fully cooled, use the parchment paper overhang to move the bars onto a cutting board.</li>



<li>Make the orange icing and drizzle over top of the bars and cut into 12 squares.</li>



<li>These will keep in the fridge for up to 4 days!</li>

<li>Use rolled oats for the best, chewy texture in these cranberry crumble oat bars. Quick oats will not give the same chewy texture.</li>



<li>It&rsquo;s important to let these bars cool completely before trying to cut into squares for easier cutting. You can even place the bars in the fridge for 10-15 minutes before cutting into bars.</li>



<li>Use leftover cranberry sauce for these bars! You&rsquo;ll need about 1 1/2 &ndash; 1 3/4 cups leftover sauce for the filling.</li>



<li>The orange icing really adds a lovely touch of flavour but you can also omit it if desired.</li>

<h3>Ingredients Needed</h3>
<p><strong>Aperol:</strong> aperol is definitely the key to this aperol spritz! In a pinch, try campari instead! Just note it will be slightly bitter.</p>
<p><strong>Prosecco:</strong> this cocktail is usually made with prosecco, but you can use cava or champagne if you don&rsquo;t have prosecco. If you haven&rsquo;t had prosecco before, it is very similar to champagne!</p>
<p><strong>Cranberry Juice:</strong> adds that beautiful festive flavour to this drink!</p>
<p><strong>Club Soda:</strong> you&rsquo;ll need to add a splash of club soda (or you can use sparkling water!)</p>
<p><strong>Orange:</strong> a classic aperol spritz is garnished with an orange slice. I think it pairs beautifully with the cranberry so I recommend keeping it in!</p>
<p><strong>Rosemary:</strong> I love garnishing this cocktail with fresh rosemary.</p>

Once done, remove from heat and set aside.</span></div></li><li id="wprm-recipe-3938-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In a small mixing bowl, crush graham crackers into small pieces. To crackers add melted butter and sugar, stir to combine and set aside.</span></div></li><li id="wprm-recipe-3938-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In another small mixing bowl, add mascarpone cheese, milk and icing sugar and stir together until combined.</span></div></li><li id="wprm-recipe-3938-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">To assemble, start with a layer of graham crackers mixture at the bottom of a small glass, followed by some of the mascarpone mixture and then the cranberry sauce. Continue layering, splitting ingredients between the 4 small glasses. You'll probably have about 2-3 tablespoons of cranberry jam per cheesecake and about a 1/4 cup of mascarpone cheese. Top with a few cranberries to garnish and enjoy!</span></div></li></ul></div></div>

This cocktail starts with making an easy cranberry jam; these flavours are the tart base.</p>

Then we add in ros&eacute;, gin and top with ginger-ale and garnish with sugared rosemary for a finishing touch! I like to use a more fruit-forward ros&eacute; to balance the tartness of the cranberry jam; one of my favourites is XOXO Wines Ros&eacute; (this is not sponsored, I just like their Ros&eacute; a lot!)</p>

Since I was little I have always felt a sense of joy around the holiday season; there was always something sort of magical about this time of year.</p>
<p>So, let&rsquo;s dig into all of the deliciousness of the season with my Monthly Favourites including which recipes to make in December!<span id="more-2720"></span></p>
<p>I had A LOT of client work in November and not much downtime, so I&rsquo;m really excited for a slower holiday season.</p>
<p>We did get away for a little long weekend in mid-November, heading to BC for a little mountain downtime which was the perfect re-charge before finishing up many projects the rest of the month.</p>

During the last week of November we got our Christmas tree up and decorated. I bought alllll of the butter at the grocery store to start my Christmas baking and I&rsquo;ve watched my favourite holiday movies about 8x each, haha.&nbsp; Some of my favourites are Elf, The Holiday, Love Actually and Home Alone which I like to watch whilst baking!</p>
<p>Stay tuned to the blog during December as I have a few more treats up my sleeve plus my baking list for the season and perfect shareable recipes for entertaining!</p>

<p><a href="https://www.chapters.indigo.ca/en-ca/books/healthyish-a-cookbook-with-seriously/9781419726569-item.html?ikwid=healthyish&amp;ikwsec=Home&amp;ikwidx=0" target="_blank" rel="noopener noreferrer">Healthyish</a> is one of the only cookbooks I&rsquo;ve purchased this year and we cook out of it all, the, time! Seriously so many delicious dishes that are simple to make, especially during the week. There is a Spiced Chicken &amp; Chickpea Flatbread with Cucumber-Dill Tzatziki that is so simple for a weeknight dinner, plus a TON of flavour! Then my other favourite recipe in the book is a Single-Serving Chocolate and Peanut Butter Cookie; for when you need a cookie, stat!</p>

Both books have a foodie-twist, are easy to read and totally heartwarming.</p>
