<p>OR, enjoy this apple baked oatmeal straight out of the oven on a weekend. With wholesome oats, in-season apples and warming spices you won&rsquo;t be disappointed!</p>
<h3>What you&rsquo;ll need to make this Apple Cinnamon Baked Oatmeal</h3>
<p><strong>Oats:</strong> Use rolled oats in this recipe (steel cut or quick oats will not work).</p>
<p><strong>Warming Spices:</strong> Cinnamon and nutmeg paired with apples are the perfect spices in this oatmeal.</p>
<p><strong>Milk:</strong> You can use almond, oat or regular milk in this recipe.</p>
<p><strong>Eggs:</strong> This baked oatmeal uses 2 eggs.</p>
<p><strong>Apples:</strong> The star of this dish, I like to use Gala or Honeycrisp apples but you can use whatever you have on hand.</p>
<p><strong>Maple Syrup:</strong> Acts as the natural sweetener in this dish.</p>
<p><strong>Baking Powder &amp; Salt:</strong> Two baking staples you&rsquo;ll need for this recipe.</p>

<p>This baked oatmeal is my new go-to for the cooler season. I love the warming spices paired with the apples &ndash; they basically make your kitchen smell like you&rsquo;re baking an apple pie!</p>
<p>And the best part is this recipe lends itself well to meal prepping too.</p>
<h3>How to store and reheat baked oatmeal</h3>
<p>To store baked oatmeal: Cover the pan with foil OR cut into individual portions and store in containers in the fridge for up to 4-5 days.</p>
<p>To reheat baked oatmeal: Reheat individual portions in the oven at 350F for about 10 minutes. Or, heat for about 1 minute in the microwave.</p>

The Fall season in Calgary has been pretty lovely so far, albeit for those two snowstorm blips which we forget about each year until they happen again.</p>
<p>So, we&rsquo;ve definitley enjoyed of walks in our favourite park and spent a bit of time in the mountains over Thanksgiving.</p>
<p><img decoding="async" class="alignnone size-full wp-image-3818" src="https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_6.jpg" alt="" width="668" height="1002" data-pin-description="Seasonal recipes to make in November plus inspiration for cozy, Fall breakfasts." srcset="https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_6.jpg 668w, https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_6-187x280.jpg 187w, https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_6-200x300.jpg 200w" sizes="(max-width: 668px) 100vw, 668px" data-pin-media="https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_6.jpg"><br>
We have been eating apples and pears non-stop since the beginning of October.&nbsp; I&rsquo;m really enjoying apples in my oatmeal for breakfast. A quick little recipe I like to make:</p>
<ul>
<li>saut&eacute; apple or pear slices in a bit of butter in a small pot until they soften</li>
<li>pour in a half-cup of quick-oats, a half-cup milk of your choice and sprinkle of cinnamon</li>
<li>bring to a simmer and cook until oats are done to your liking</li>
<li>top oatmeal with a combination of nuts, dried fruit and spices like walnuts, pumpkin seeds, maple syrup, cinnamon, raisins, hazelnuts or dried apricots</li>
</ul>
<p>It&rsquo;s a nice and quick breakfast that is super cozy for this time of year. Plus, you&rsquo;re using apples or pears that are in season!</p>
<p><img decoding="async" class="alignnone size-full wp-image-3823" src="https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_4.jpg" alt="" width="668" height="1002" data-pin-description="Seasonal recipes to make in November plus inspiration for cozy, Fall breakfasts." srcset="https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_4.jpg 668w, https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_4-187x280.jpg 187w, https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_4-200x300.jpg 200w" sizes="(max-width: 668px) 100vw, 668px" data-pin-media="https://www.cookinginmygenes.com/wp-content/uploads/2019/11/Whats-In-Season-Recipes-to-Make-in-November_4.jpg"><br>
And, if you love cozy breakfast dishes like me you might like my <a href="https://www.cookinginmygenes.com/spiced-oatmeal-honey-pears/" target="_blank" rel="noopener noreferrer">Spiced Oatmeal with Honey Pears</a> too.</p>
<p>A couple of other breakfast recipes I&rsquo;ve been making lately are these <a href="https://www.ambitiouskitchen.com/fluffy-coconut-flour-pancakes-with-wild-blueberry-maple-syrup/" target="_blank" rel="noopener noreferrer">Coconut Pancakes with Wild Blueberry Maple Syrup</a>; perfect for the weekend. I&rsquo;m seriously digging this <a href="https://bromabakery.com/golden-granola/" target="_blank" rel="noopener noreferrer">Golden Granola from Broma Bakery</a> too. And as you can see I&rsquo;m really on an oats kick so these <a href="https://justinecelina.com/hazelnut-oatmeal-golden-raisin-energy-bites/" target="_blank" rel="noopener noreferrer">Hazelnut Oatmeal Golden Raisin Energy Bites</a> are my go-to snack right now; super easy to meal-prep for the week ahead!</p>
<p>And, I think I&rsquo;ve mentioned this cookbook before but all year it&rsquo;s been a favourite of ours, the <a href="https://cookieandkate.com/love-real-food-cookbook/" target="_blank" rel="noopener noreferrer">Love Real Food from Cookie &amp; Kate</a> is our go-to #meatlessmonday book! The salad recipes are especially amazing and there is a fairly simple pizza dough too.</p>
<p>So, let&rsquo;s get inspired by What&rsquo;s In Season in November to cook with!</p>
