I love peppermint desserts during the holiday season like these peppermint mocha brownies! Growing up, this candy cane ice cream was a family favorite for dessert on Christmas eve so I thought why not make my own no churn version.

What does ‘no churn’ mean?
No churn means you don’t need a fancy ice cream maker or machine to make this recipe. You create a vanilla ice cream base using heavy whipping cream, sweetened condensed milk and vanilla extract. These three ingredients mixed together create a creamy texture for the s’mores ingredients to be stirred into. The best part of no churn ice cream recipes is there’s so few ingredients and you don’t need any special equipment.

Oreos: use classic Oreos or other ‘sandwich’ cookies that are similar; if you’re gluten-free, you can definitely use gluten-free Oreos or sandwich cookies
Candy canes: use candy canes, crushed, to enhance the peppermint flavour of the ice cream
Heavy whipping cream: make sure to use cold heavy whipping cream to whip into stiff peaks as part of the base of the recipe; whole milk or other milk products will not work
Sweetened condensed milk: this is the foundation of a no churn ice cream so there are no substitutes for this ingredients
Vanilla extract: adds the vanilla flavour to the vanilla ice cream base
Peppermint extract: adds the peppermint / minty flavor to the ice cream base

how to make this homemade peppermint oreo ice cream
- Line an 8x5inch loaf pan with parchment paper. (Alternatively you can use a circular 9×9 pan).
- In a medium bowl, stir together the vanilla extract, peppermint extract and sweetened condensed milk until combined.
- In a large mixing bowl, use a hand mixer with whisk attachment or use an electric mixer with whisk attachment to whip the heavy cream to medium-stiff peaks. Alternatively, whip the cream with a whisk attachment in a stand mixer to medium stiff peaks.
- Pour the sweetened condensed milk mixture into the whipped cream mixture and gently fold everything together to combine (it should be fairly smooth). Then gently fold in the chopped cookies and the crushed candy canes.
- Pour the mixture into the loaf pan and add extra Oreos and/or crushed candy canes on top if desired.
- Cover the loaf pan tightly with plastic wrap and freeze for at least 8 hours or until firm. When serving, if the ice cream is too difficult to scoop, let it warm up for about 5 minutes on the counter.

tips & tricks
- Make this simple recipe gluten free by using gluten-free Oreos (or other chocolate and cream ‘sandwich’ cookies) and gluten-free candy canes.
- If you can’t find candy canes, you could also crush peppermint candies.
- Make sure you get the exact ingredients needed for the base of this no churn s’mores ice cream – your ice cream won’t turn out right if you use lower fat or lower sugar alternatives.
- It’s very important that you use cold / chilled whipped cream as warm cream won’t whip properly.

I find a loaf pan works best for freezing the no churn ice cream since they fit well in the freezer. However, once the ice cream is made feel free to scoop and store in a freezer-safe container in the freezer.
Unfortunately whipping the cream in a blender will not product the medium-stiff peaks you need to create the base of the ice cream. So, I don’t recommend using a blender.
I do not recommend using fresh mint. This peppermint oreo ice cream recipe has only been tested with peppermint extract.

No Churn Peppermint Oreo Ice Cream (for Christmas!)
Ingredients
- 14 oz (1 3/4 cups) sweetened condensed milk
- 2 cups heavy whipping cream
- 1 tbsp vanilla extract
- 3/4 tsp peppermint extract
- 10 oreos, chopped (plus more for garnish if desired)
- 1/2 cup crushed candy canes ((plus more for garnish if desired)
Instructions
- Heat the olive oil over medium heat in a large pot.
- Add in the garlic and onion and sauté for 5-7 minutes until they start to brown.
- Add in your frozen peas, salt and pepper and stir occasionally, for about 1 minute.
- Next, pour in the vegetable broth and turn the heat up to high for about 5 minutes until it comes to a boil.
- Remove the pot from the oven and let sit 5-10 minutes to cool slightly.
- Then, blend the soup in the pot using an immersion blender or in batches using a stand blender.
- Once the soup is blended, heat on medium-low in the pot for about 5 minutes, taste and add additional salt and pepper to your liking.
- Serve with a drizzle of greek yogurt, your favourite crackers or grilled cheese!

- Chicken tacos: serve chicken with grilled tortillas, avocados, salsa, fresh cilantro, cabbage coleslaw mix and cilantro.
